Is it possible with the available tools to create a composite image covering a large-ish region on the sky (~10-100 square degrees)?   I know how to retrieve images of smaller regions, but was wondering if there is a wide-field image construction available?

Hi, nothing "built-in", but you can use Python libraries such as reproject or MontagePy, or the Montage software itself (http://montage.ipac.caltech.edu) on your own machine to stitch areas, using the WCS of images.
